FISH CUTLETS (FISH BALLS)

INGREDIENTS

  • ½ brown onion, finely chopped
  • 1 garlic clove, finely chopped
  • 2cm piece of ginger, finely chopped
  • 1tbs oil
  • 8-10 curry leaves
  • 2-3 green chillies or 1tsp chilli powder (optional)
  • 2-3 potatoes, diced
  • 425g tin tuna or mackerel, drained
  • 2-3tsp pepper
  • Salt to taste
  • 2tsp lemon juice
Crumb Coating
  • 1 cup flour
  • 1-2 cups breadcrumbs
  • 2 eggs, whisked
Oil to deep fry
 

METHOD

  1. Add potatoes to pot of water and boil until tender and mash.
  2. Add tablespoon of oil to frying pan and heat on medium.
  3. Add onion to pan and fry until golden
  4. Add garlic, ginger and chillies or chilli powder (if using) to pan and fry for 2-3minutes
  5. Then add curry leaves and fry for 1 minute
  6. Add tuna / mackerel and potatoes and mix together in pan for few mins
  7. Add salt and pepper
  8. Stir in lemon juice then leave to cool
  9. When cool to handle, roll 1-2tbs in balls
  10. Roll in flour, then eggs and crumbs
  11. When all are coated, you’re ready to fry!
  12. Heat oil in deep pan until hot. Test, by dropping a little bit of breadcrumbs into pot, and if it sizzles, you’re ready to fry.                 
  13. Deep fry cutlets until golden and drain on absorbent paper towel.
  14. DIP IN TO MAMA MELISSE HOT SAUCE......ENJOY

 


 

SPICY PRAWN PASTA

INGREDIENTS

  • 1 pkt spaghetti (or any pasta of your choice)
  • 1 brown onion, finely chopped
  • 2-3 garlic cloves, finely chopped
  • 2tbs oil
  • ½ cup white wine
  • 700g raw prawns, shelled and deveined (can substitute for cooked prawns)
  • 1 bunch parsley, finely chopped
  • 2-3 lemons, juiced
  • Zest of 1 lemon
  • 2-3tsp Mama Melisse Hot Sauce

 

METHOD

  1. Bring a pot of water to boil for the pasta
  2. Mix lemon juice, zest, chopped parsley and Mama Melisse Hot Sauce and keep aside
  3. Add pasta to boiling water and cook until al dente, then drain
  4. While pasta is cooking, heat oil and fry onion for 2-3 mins until soft. Then add garlic and cook for 1-2mins.
  5. Add wine to pan and cook for 2mins
  6. Add prawns and cook until pink
  7. Add in the pasta and the lemon juice mix and stir to combine.
  8. Enjoy with green salad and garlic bread!

 

 

Manni's Bean Chilli

INGREDIENTS

  • 1 onion
  • 500g Beef Mince
  • 1 can diced tomatoes
  • 2 and a half cups of chicken stock
  • salt, pepper and garlic seasoning
  • 3 different cans of beans (Cannellini, Kidney and Black Beans)
  • Mama Melisse Hot Sauce 

METHOD

  1. Saute onions until translucent
  2. Add beef mince and fry until brown
  3. Add can of tomatoes
  4. Add chicken stock
  5. Add seasoning
  6. Add as Mama Melisse as you like (I usually have 5 dollops)
  7. Cook for 30 mins, taste test for seasoning and spice
  8. Rinse and drain the beans then add to cook for 20 mins
  9. If you want it more soupier just add more stock
  10. I like to add left over brisket in the last 5 minutes just to warm meat through
  11. Serve
  12. Add yoghurt if too spicy
  13. Serve with crunchy bread. ENJOY

 

 

 

MAMA'S CHEESE LOG

INGREDIENTS

  • 1 tub of Cream Cheese
  • 1 Handful of Dried Cranberries
  • Mama Melisse Hot Sauce
  • Handful of Dried Coconut nut mix or Granola

 

METHOD

  1. Mix Mama Melisse Hot Sauce to the cream cheese. Keep adding hot sauce until you find your heat sweet spot
  2. Chop or blitz dried Cranberries and add to cream cheese
  3. On Glad wrap roll cheese into a log (I use a sushi mat with glad wrap for this)
  4. Put in freezer for 1 hour to harden
  5. Remove from freezer and unwrap from glad wrap.
  6. Roll on the coconut seed mix or granola
  7. Serve with fruits and crackers
  8. Drizzle with honey (optional)
  9. Take to your party and take all the credit

MAMA’S CREAM CHEESE LOG

 

Ingredients:

Mama Melisse Hot Sauce

Cream Cheese

Dried cranberries

Granola or nut mix or coconut mix

Honey (Optional)

 

 

Recipe:

Blitz dried cranberries in blender until finely chopped

Mix chopped cranberries into cream cheese

Add a few good dollops of Mama Melisse Hot Sauce and stir well

Transfer onto a sheet of gladwrap and roll into a log

Place in freezer for 1 hour to harden

Remove from freezer and glad wrap

Coat in granola, nut mix or coconut mix

Serve on a plate with crackers and fruits

Drizzle with honey (Optional

 

 

MAMA’S HOT SAUCE COMBOS

 

Ingredients:

Mama Melisse Hot Sauce

Mayonnaise (Kewpi Mayo is awesome)

Greek or natural Yoghurt

BBQ Sauce

Soy Sauce

Any sauce

 

Mama Melisse Hot Sauce mixed with Kewpi Mayo- mix to your heat liking.

We use approx. 10 parts mayo to 1 part hot sauce

 

Mama Melisse Hot Sauce mixed with Greek yoghurt for delicious salad dressing or dip

 

Mama Melisse Hot Sauce mixed with BBQ Sauce for your weekend breakfast sauce on bacon and eggs

 

Mama Melisse Hot Sauce mixed with soya sauce for dumplings and spring rolls

MAMA’S DELICIOUS PRAWN OR CHICKEN SKEWERS

 

Ingredients:

Raw thawed or fresh prawns or chicken

Mama Melisse Hot Sauce

Greek or natural yoghurt

 

Recipe:

Peel prawns or chop chicken and put on skewers

Mix Mama Melisse hot sauce to yoghurt and separate onto 2 small bowls.

Mix to your liking

Coat prawn or chicken skewers with yoghurt mix

Cook on bbq until cooked

Slide prawns or chicken off skewers onto salad or plate

Drizzle with Mama Melisse Hot Sauce and yoghurt mix

(Make sure the finishing dressing has not touched raw chicken or prawns)

 

MAMA’S HONEY MUSTARD CHICKEN

 

Ingredients:

Raw chicken thighs

Mama Melisse Mustard

Honey

 

Recipe:

Mix Mama Melisse mustard and honey to your liking.

Separate mama honey mix into 2 bowls

Coat chicken with mama honey and cook to your liking. (75 degrees Celsius internal is minimum temp)

Drizzle chicken with Mama honey from 2nd bowl

(Make sure no raw chicken has touched the Mama Honey mix that you drizzle after cooking)

 

You can also mix Mama Mustard with Kewpi Mayo and honey for a delicious dressing.

 

MAMA CRUSTED PORK CHOP

 

Ingredients:

Pork Chop

Mama Melisse Mustard

Sour Cream

Grated Cheese

Any cheese works but Pecorino is delicious

 

Recipe:

Cook Pork Chop in airfryer for 12 minutes on 180

Mix equal parts Mama mustard, Sour Cream and grated cheese

Remove chop from airfryer and coat mixture on one side

Place back in airfryer for 5 minutes

 

This recipe can be done in bbq or oven also and can use chicken or fish

 

 

 

MAMA’S HOT WINGS

 

Ingredients:

Chicken Wings

Choice of rub or seasoning

Mama Melisse Hot Sauce

Butter

Optional Blue Cheese and cream

 

Recipe:

Season Wings and cook in oven, airfryer or BBQ until they reach 75 degrees internal

Put wings into a large bowl

Drizzle with Mama Melisse Hot Sauce

Toss in bowl

 

Blue Cheese dip (optional)

Mix equal parts Blue cheese with cream

Lightly whip

Can use sour cream or greek yoghurt as alternative to cream.

 

 

 

MAMA’S DELICIOUS BRUSSEL SPROUTS

 

Ingredients:

Brussel Sprouts

Fatty Bacon

Mama Melisse Mustard

Butter

White wine

Sour Cream (optional)

 

Recipe:

Chop bacon and cook in pan until almost cooked

Remove bacon but leave bacon oil

Slice Sprouts in half and char to your liking in the bacon oil

Add almost cooked bacon back in

Add a knob of butter

Add a spoonful of Mama Mustard

Add a dash of white wine

(Optional add a spoon of sour cream)

 

 

 

MAMA’S SPICY CHORIZO PRAWNS

 

Ingredients:

Prawns (Raw)

Chorizo Sausage

Mama Melisse Hot Sauce

Butter

White Wine

 

Recipe:

Peel Prawns set aside

Slice Chorizo and fry (You want the oil to come out of the chorizo)

Remove chorizo before fully cooked but leave oil in pan

Cook prawns in chorizo oil on medium heat for couple of minutes

Add butter

Add Mama Melisse Hot Sauce and toss

Add Chorizo back in

Add white wine and simmer 1 minute.
